Elsker disse muffinsene. De er så innmari søte synes jeg! :) Kan vel ikke annet enn å like edderkopper når de kommer i denne versjonen vel! Marius hadde med disse for å dele ut til klassekameratene sine i forbindelse med navnedagen sin i forrige uke. Jeg har laget de et par-tre ganger før men det er noen år siden nå, og kompisene syntes det var skikkelig stas å få servert disse igjen! Ikke bare ser de morsomme ut, de smaker helt nydelig også! Deilige sjokolademuffins fylt med sjokoladebiter...... (Dette er en stor oppskrift som gir ca. 40 muffins. Du kan selvsagt halvere oppskriften hvis du ikke skal lage den til en hel skoleklasse....)

I love these cupcakes. I think they are so incredibly cute! :) Can't dislike spiders when they look like this, right? Marius brought them to school last week to share with his classmates in celebration of his nameday. I have made them a couple of times before but it is a few years ago now and his friends thought it was great getting these again. It is not only that they look cute, they taste lovely as well. Delicious chocolate muffins packed with pieces of chocolate.... (This is a large recipe giving approx. 40 cupcakes. Feel free to make half portion if you're not making them for a whole school class.....)
INGREDIENSER (ca. 40 stk) / INGREDIENTS (makes ca. 40)
380 g mykt smør / 380 g butter, softened (13.4 oz)
6 dl (ca. 550 g) sukker / 600 ml sugar (2 1/2 cups)
6 store egg. romtemp. / 6 large eggs at room temp.
3 ts vaniljesukker / 3 tsp vanilla sugar
13,5 dl (ca. 800 g) mel / 1,3 litre plain flour (5 1/2 cups)
3 ts bakepulver / 3 tsp baking powder
3 ts natron / 3 tsp bicarbonate of soda
9 ss kakaopulver / 9 tbsp cocoa powder
4,5 dl kefir / 450 ml buttermilk (3/4 cup + 2 tbsp)
200 g sjokolade, hakket / 200 g chocolate, chopped (7 oz)
Til dekorasjon / For decoration
Smeltet sjokolade / Melted chocolate
Store og små Smarties / Smarties, small and regular size
Lakrislisser / Liquorice laces
FREMGANGSMÅTE / METHOD

Ha sukker og smør i en stor bakebolle og bland til lyst og luftig med en elektrisk mikser, ca. 10 minutter. Tilsett ett og ett egg og bland godt mellom hvert. Bland mel, bakepulver, natron og kakaopulver og sikt dette i. Tilsett til slutt kefir og bland godt, før du til slutt rører i hakket sjokolade.
Sett muffinsformer i et muffinsbrett (det er nesten helt nødvendig med muffinsbrett, da blir de høye og flotte. Jeg har prøvd uten en gang og det ble egentlig ganske mislykket....de fløt utover før jeg fikk de i ovnen!). Fyll formene 2/3 fulle og stek ved 200 grader på midterste rille i 15 minutter. La muffinsene avkjøle helt før du pynter de.
Dekorering:
Begynn med benene: Del lakrislisser i passe lange biter, stikk tre hull på hver side av muffinsene med en tannpirker e.l. og stikk lakrislisser godt inn i hullene. Smelt sjokolade over vannbad og smør sjokolade over toppen og litt over hullene slik at du "limer" benene litt fast. Pynt med to store Smarties til øyne og mini-Smarties i mønster over "ryggen". ENJOY!!!

Cream together softened butter and sugar for approx. 10 minutes, using an electric mixer. Add one egg at the time, beating well between each addtion. Mix flour, baking powder, bicarb and cocoa in a bowl and sift this into the buttercream. Add buttermilk and mix well again before lastly stirring in the chopped chocolate.
Place muffin cases in a muffin tray (it is almost imperative using a muffin tray, then you will get lovely, high muffins. I have tried making them without once and it didn't turn out very well to put it mildly. They floated out before getting them into the oven!) Fill the cases 2/3 full and bake at 200 degrees Celcius (390 degrees Fahrenheit) on the middle rack for 15 minutes. Let the muffins cool completely before decorating.
To decorate:
Start with the legs: Cut the liquorice laces in pieces, make three holes on each side of the muffin with e.g. a toothpick and put the liqourice laces into the holes. Melt chocolate and spread on top of the muffins and a little over the holes as well to "glue" the legs a little. Decorate with two regular sized Smarties for eyes and mini-Smarties in a pattern on the "back". ENJOY!!!
