Norsk: (English below) Jeg har skikkelig sansen for Gordon Ramsay og etter å ha sett flere av programmene hans av forskjellige slag måtte jeg jo bare anskaffe meg noen av kokebøkene hans, bl.a. "Fast Food", som er spekkfull av herlige oppskrifter på sunn og god mat som ikke tar all verdens av tid å lage. Skulle ha besk her en kveld og ville lage en av mine favorittretter Kyllingfilet med Parmesan - og Artisjokklokk (oppskrift HER) og var på jakt etter ideer for en grønnsaksrett å servere ved siden av. Bladde gjennom ovennevnte kokebok og syntes denne her så nydelig ut. Gjorde noen egne småjusteringer av originaloppskriften (som vanlig) og resultatet ble.......Mmmmmm.....Dette her kommer garantert til å bli en gjenganger her i huset. Nydelige smaker og ikke vanskelig eller tidkrevende. Passer som en egen vegetarrett eller som tilbehør til kjøtt eller fisk. Gleder meg allerede til helgen da jeg skal lage den igjen....
Denne oppskriften passer til ca. 6 personer som tilbehør eller 4 personer som hovedrett.
English: I do like Gordon Ramsay and after having seen many of his programs I just had to get some of his cookbooks, for example "Fast Food", which is loaded with excellent recipes for delicious and healthy food which don't take ages to make. I had guests coming over for dinner the other night and wanted to Cook one of my favourite dishes, Parmesan- and Artichoke crusted Chicken Filet (recipe HERE) and was searching for ideas for a vegetable dish to serve on the side. I had a look through the aforementioned cookbook and thought that this one looked lovely. I made a few personal adjustments (as usual) and the result was......Mmmmmmm......I'll be making this over and over again for sure. Great flavours, easy and quick to make. It can be served as a vegetarian dish on its own or as a side dish to meat or fish. I'm looking forward to this weekend when I'll be cooking it again for friends coming over....This recipe serves about 6 persons as a side dish or 4 persons as a main dish.

1 stor aubergine / 1 large eggplant
1 stor løk / 1 large onion
4 stilker selleri / 4 celery stalks
1 stor rød paprika / 1 large red pepper
5 store tomater / 5 large tomatoes
2 zucchini / 2 squash (zucchini)
4 kløfter hvitløk / 4 cloves garlic
100 g grønne oliven / 100 g green olives
50 g kapers / 50 g capers
1 neve frisk basilikum / 1 handful fresh basil
4-5 ss olivenolje / 3-5 tbsp olive oil
1,5 ss rødvinseddik / 1,5 tbsp red wine vinegar
1 ss balsamicoeddik / 1 ss balsamic vinegar
2 ss sukker / 2 tbsp sugar
50 g ristede pinjekjerner / 50 g roasted pine seeds
Salt og sort pepper / Salt and black pepper
